Service Catalog and Different languages

Hello,
I'm trying to understand how Servicenow Tokyo versions work, especially the Service catalog.
I want to create categories in 3 languages: French, Dutch and English.
So I have all the languages installed and active, I started by creating the categories in the 3 languages but I have a problem because the categories in NL appear with the users in FR and when I am in English I have categories in NL or FR.
For the articles I've translated via the "Request translations" button or "edit translations" for those that were already created.
And here too I have articles that remain in English and are not translated into NL or FR. Could you help me by explaining how to do this because I'm stuck.
Thank you for your help.

By default all the choices in english will be converted into different language for which the plugin is activated already.

The categories in language will appear depending on the preference of the user that he has selected on the portal by going to profile.

You need to verify the choices of a variable based on language.

Make sure that choices have proper language configured in the choice table. for english it will be en.

For Knowledge you might have to translate first and create a new knowledge article. do select the language on the form.

Please mark it correct, if it resolves your query.
