how category and subcategory values are populated, if the data load is manual and or via any integration?

you need to set the cat and sub-cat internal value.

You can add the field value options under the category and subcategory field definition. In the subcategory field is where you can set the dependant options so that they only appear based on the category selection.

Through integration it depends on how its setup. It needs to map to the category and subcategory fields from whichever table it is in

Can you please explain that in cmdb perspective? As the type is string, not choices.
