Catalogue item currency selection missing - Administration Fundamentals - Lab 5.2.1 Catalog Item

I am currently working my way through the "ServiceNow Administration Fundamentals (Xanadu)" e-book, I have reached "Lab 5.2.1 Create a catalog item" but I am having an issue with "Section 3: Add pricing to the Infinity catalog item" where I am unable to select AUD when adding a price for one of the item's options.

During Lab 5.2.1 you are walked creating a catalogue item using the catalog builder. Next you set the price of the item via the Maintain Items module. Then you have set the price of one of the variable options.

The issue I am having is that when setting the price of the item the currency options are $, CHF, £, ¥, €, AUD. However, when setting the price of the variable option I can only choose $, CHF, £, ¥, € missing out on the AUD option. If I select $ the price is definitely USD as the price is adjusted and adds $153.49 in the Service Catalogue.

So, I am wondering how one would go about correcting the currency options?
