how did you handle in progress requests when implementing playbooks

I am working to move our procurement team to use the workspace and playbooks but they have many in progress requests that are in the middle of the process.

How have others handled these requests? Did you just close them out the old way and any net new use the playbook or did you start everything fresh/new with the playbooks or?
