That would require significant customization of the My Request widget and will possibly break functionality if the widget is updated in a next store release from ServiceNow. (store releases happen 4x / year for Employee Center).
If it suffices to simply change the secondary display fields, this can be adjusted here:
1. Filter navigator -> Service Catalog -> Catalog Administration -> My Request filter
2. Filter the "applies to" on service portal
3. Select the table filter you want to update, e.g. "Service Catalog Requested Item Portal"
4. Update the "secondary fields to display" fields:
