For the second question, to update the component's header, go to the 'Config' tab and select the 'Header and border' option. Under this option, go to the 'Chart title' option and give the header.

All the other metrics that were out of the box doesn't use headers and use metric labels and have list titles when I click on the score. If I create a new component with a header, it won't look similar to all the other components.
