Field mapping without mapping assist and automap matching fields

Hi all, I want to map fields in an alert to incident. But some of the fields are different in alert and in incident. what should i do to automap them.

There is a provision to write a script in the mapping, create a new field mapping record use script do not select source field just select target field and in the script return the value that should be set to the target field
