how can we configure the available fields on Record info overview , Contextual side panel....
for eg , here I dont want to see the stage field

You can navigate to Now Experience Framework > Configuration Settings > UX Form Header OR directly open the table sys_aw_form_header.
In there open the record for your table and you can add more field or remove fields in Secondary Values related list.
