Found this in the product documentation:

  1. Navigate to All > Now Experience Framework > Experiences.
  2. Select the application you want to add to the Workspaces menu on the Unified Navigation.
Note: A warning message appears if you are in a different application scope than the application form you are viewing.
    Application scope warning message example
    Displays current application scope.
    To change your application scope
    • Select instance application scope icon. from the header bar.
    • Select application scope.
    • Search and select your new application scope.
  3. In related lists, select the UX Application Category M2Ms tab.
  4. Select Workspace in the Experience Category column.find_real_file.png

To remove that workspace just delete:

be careful deleting -  The KB article I found on SN Support suggests the same approach as suggested here by Abdul Khader - with the important added detail:  'take a backup of these records' before deleting.   (I learned the hard way)

The replies to this thread are over complicating the original poster's need.  the setting to disable this from the menu is here:

To show Workspaces in the Workspaces for specific roles, you can also use ACLs, see this post:
https://www.servicenow.com/community/next-experience-forum/experience-roles/m-p/2399005

To hide the "CMDB Workspace" from the workspaces menu, and show this only for admin user I changes the "nom.cmdb.home" ACL, in CMDB Workspace scope.

In case you want to hide the Workspace category in general - you can navigate to the Unified Navigation Menus  [sys_polaris_menu_config] table and just set the Workspaces record - Menu active = false
