It contains a few applications and business rules/ client scripts/ workflows/ flow designs/ integrations, etc., which are beneficial for getting switched in my job. These days, I have been preparing for the interviews(for a developer role). So, I would like to know if I can export one important application, the data associated with it, and the scripts written on that data for learning purposes onto another instance. It would be beneficial if someone could help me with that.

For PDI since there is no official support we cannot raise any concern on same.
Now for your stuff created you can backup by checking updateset which you might have created during any creation or updation of scripts. If no updateset was set it will be in default then just move relevant data to particular update set and take those backup which you can commit on other instance if this PDI is lost. For data part you will need to take XML export as data is not captured over updateset usually.
