Last 90 days or full for data copied for specific tables?

The speed shouldn't be the concern. It's about what you need on the target instance. The difference between the two will not be huge. I think mostly the last 90 days will suffice. But if you clone only once or twice a year, I would consider doing a full data clone, so you are sure all data is copied over (especially to a TEST or ACC instance). On DEV you usually need less (real) data.

I have to correct myself: selecting '90 days' is more time consuming, because it's deleting all older data after the clone. You can reduce the clone time (if that's really necessary, because I still think it won't matter that much) by excluding large tables.
