What I thought would be relatively simple has proven a bit more of a challenge. I need to update the "Contact Live Agent" message but can't find where it is configured.

Never mind, just found it.
And if anyone else runs into this and want to know where to find the message text, go to:
Conversational Interfaces > Chat Settings > General > Branding > Default Branding and scroll down to Menu Items. There you can click on the icon to open the entry and update the Label text
