You can still do it in the 'old' way. Question is why you would want to? If you want to use the builder, start using the builder, but most effect will be gained from having everyone use it and not have the 'but I don't want to change my way of working' people still do it the same.

Suppose I am having new fields that are available in traditional form can be added to Service Builder or not.
If, Yes then how we can add the fields in Service Builder???

I tried to create a new field on BS and unfortunate it did not appear on builder. Seems it is OOTB as of now. You may log case to get more detials.
