I feel like I should be able to find this in the documentation, but I haven't come across a definitive answer yet - 

Do Themes apply to OOB UI Builder components?  If, for example, I were to extend the Polaris theme to create a custom theme in a custom workspace, would an update to the primary font update the font in all Form, Button, and List components in that workspace?

Based on this video: https://www.youtube.com/watch?v=3KDrbJK25FA i belive yes, when changing the font in the theme, it would by default update all instances using the themes font.
