No, you cannot directly add catalog item variables as columns to catalog task lists using the "Personalize List" feature in ServiceNow.
better create a report and you can get the variable.

did you try that ? I feel not possible to add it to catalog task because it's not it's field exactly, it's a kind of formatter.
But you can apply filter directly on it in catalog task table itself.

if the variables are present in the list layout then see if users can add/remove those using personalize gear icon

No @athavichith in OOB configuration it's not possible. But definitely if you create a custom column reference Variables table it will come.
As mentioned in my previous response, it won't come in personalize list by default. But you can add conditions.
