All variables are showing up in an SCTASK record, even though not all are chosen in Flow design

I am using the Flow designer for the creation of a catalog task. There are a number of variables from the catalog item, but I only want specific ones to show up on the SCTASK record. When I use the "create catalog task", I choose the catalog item. and all the variables are available on the left. I chose which ones I wanted, moved them to the right, and saved. When I execute the flow, it creates the SCTASK record, but all of the variables are there.
We are currently running San Diego.

No that's a feature, to have no idea how this platform works, as you have to be the developer of FLOW to know how it works.

Was there a resolution found to this, or is this another typical ServiceNow "feature" to not work as one would expect?
If you leave the "slush bucket" empty, display all.
If selected values, only display them.
How hard is it to code for that?
