What are some of the url's i can test to see what a business_stakeholder role holder can see? We'd like to see their view in Change and Incident. I'm assuming they can see read only version of these pages.

Not only they can read incident, but they can read change, problem, release, cmdb, performance analytics report and many other tables too.
According to role description
Use the Business Stakeholder role to provide authorized users to approve, view/read records across the organization and view reports. Note there is a fee associated with this role. Do not assign it to users without confirming your organization has the appropriate entitlement. Please review the documentation for additional details.

What exactly do you mean? The URL's for incidents and changes are exactly the same for every user. If you type in 'incident.list' and open a record, you will see it as stakeholder (if you are impersonating one). Same for change_request.list. There aren't impersonate URL's, you just impersonate and go to the records.

sorry, i mean there are screens that are more for the fulfiller side, then there are typically portal styled pages that are more minimal. i just wanted to go through them to see what i wanted to expose to the requester. i currently have all non-fulfillers redirected to our /sp page. they don't get into the regular views that fulfillers do. but the service portal /sp is still quite basic for them just showing a few catalog items. i'm wanting to review the different methods of exposing all the ticket information to them....or at least more of it.

This doesn't really make it any clearer. You will have to impersonate a business stakeholder and just see what he can see. And if that's too much or too little, adjust that.
