Change reference field from drop down to lookup using list (magnifying glass)

How can I update a reference field that currently is a drop down and make it a lookup using list (magnifying glass)

OOTB it is like this:
Do you want to change the data type? If yes, I would not recommend changing an OOTB field, as it will impact many areas. It’s better to create a new field and use that instead.

I do not want to change the data type.
Sample in your screenshot is the Subcategory field, I can see that its in a drop down field and I assume its reference field since its mapped to a Service. I want the subcategory field to be a lookup rather than a drop down.

since it's a choice type field it cannot be made as reference
Reference field hold sysId and refer to some table
Choice field holds choice values
what's your business requirement here?
