Customize display of reference field lookup?

I have a table whose default list view looks like this:
But when I open the form whose field is a reference field, I only see a couple of the columns:
I see the reference lookup documentation, but I'm not going to ask my customers to create their own personalized lists. I just want to be able to set the view for all users of this table when using a lookup.

No problem! That's one of those things that seems obvious, once you know how to do it, but I only know because I was trying to do the same thing a few months ago.

I've spent the better part of a day trying to find this answer. I appreciate the flexibility of SN, but sometimes there just seem to be too many possible answers to a simple freaking question. It reminds me of my time spent with Apache, absolutely maddening.

haha, absolutely - like I said, I only know now because I did exactly the same thing a few months ago, spent hours trying to figure out how to customize that, playing with views and whatnot and testing, only to have it not work, or work different for different roles.
