Editing buttons/available fields in cart layout

I am setting up a new instance and there is a desire to hide fields and buttons on the cart view.  Docs indicate that this should be done in "Maintain Cart Layouts" but that doesn't actually seem to work.  For instance, in a fresh PDI if I uncheck these fields under "Components" (this is for the Shopping Cart Widget layout), it successfully hides the price fields but does NOT hide the Quantity field:

Also, the options under the Buttons list don't actually match what is seen in the widget screen at all:

Am I missing something about where these fields are controlled?  Mostly confused about why Quantity can't be removed and why the buttons can't be controlled at all from the Cart Layout.  I know I can modify the HTML of the widget but I don't want to do that in the live environment.

I believe cart layouts is for the standard UI. On each catalog item there is a Portal Settings tab. I believe this is were they make the necessary changes you are looking for.
