What is the address that users submit an inbound email action to and how is this configured? I know it is <something>@<instance>.service-now.com. Just trying to determine the "something".

You instance name @Service-Now.com
mycompany@service-now.com
You can find that out by navigating to system mailboxes->Email Accounts and check the SMTP user name.
