Another idea
1. Filter a list of incidents down to the single incident you want to export to excel
2. Right click at the top between the fields, and click import (I'll explain in a second why)
3. Select "Update", then click "Create Excel Template"
The reasoning is that the template for updating a list of records will export out every single field on the table related to the list of records you were just on. Exporting to excel normally from a list will just show the currently visible fields.

That is stange. I think either you've got a limitation with your profile (are you logged in as an admin) or you could also have an ACL on this table that is preventing you to export data.
The ACL should be like this :
Type : record
Operation : report_on
NAme : Table name
Could please check that ?
