How stages and states fields are getting changed in request and requested items

Hello everyone,

I just wanted to know how stage and state fields are getting changed from Open -> Waiting for approval -> Request Approved -> Closed complete in out of box for request and requested items. I have not added any  flow or scripts to change flow stages states but its getting updated. Please let me know how the changes are happening. Is there any script or flow from out of box?

Thank you for the response.

I checked the current configuration, flow/workflows and scripts but I am not able to find one. I am not sure how the stage/state field values are getting changed. I wanted to know how the changes are happening? Is it out of box engine in backend or do we have any particular scripts/flows/workflows/configuration that we can look onto?
I am using flow for my approvals in RITM but I have not added/updated any state/stage changes.

Needed one clarification

This BR is only adding choices to stage field but not changing stages (Ex. Waiting for approval -> Request approved). How is the transition happening if I have not added flow stages in my flow ?
