How to set up back up approvers?

I have received a request to set up a secondary approver. The request is that if the primary approver doesn't respond in 2 business days we need to cancel that approval and resend the approval request but this time it should also include the secondary approver. The approvals are triggered from a workflow.
Can anyone please help me with this?

Hi Jon, the back up approval is required only for one particular RITM. Setting up a delegate will trigger all the other approvals to the delegate too.

Is this for all items or just one?
if it is for all items it seems like a scheduled job would be better.. look for any approval 2 days old that is in a requested state

Hi Doug, we need it only for one particular RITM. Within this RITM workflow we have 2 approvals and we need a back up only for one of them.
