For Each Record

If Due Date is tomorrow 

Send Email1 on Today

Else If Due Date = Today + 3

Send Email2 on Due Date + 3

Else If Due Date = Today + 5

Send Email3 Due Date + 5 CC Manager

Exclude Weekends while Due Date Calculation

I would use either scheduled flow/scheduled job

• Get due date
• create a schedule (only weekdays)
• pass due date to the schedule and check the due date difference
• check date difference (today+3, due date+3, today+5), find out all matching records and send appropriate email
