Hi @Rachel Lai,
Do you want to make a catalog variable read-only? if yes then you can achieve this using Catalog UI Policy.
For details please refer to this product documentation: Create a UI policy for catalog items
And if you want to edit this flow which is currently showing as read-only, please click/select the Edit Flow button.

it's an easy requirement.
You can create Catalog UI policy or Catalog Client Script which Applies on Catalog Task only and make those variables readonly
