Why is the "Show realtime updates" checkbox in the Edit Widget options on the Dashboard not appearing for Bar and List report types? Is it only available for Score reports?

Yes, unfortunately this option is only available for score reports.

Real time updates is not available for all types, See below

Reference -Enable real-time updating for single score report widgets (servicenow.com)

Also, I would really recommend being careful while using this as it may have an impact on performance.
