What is this parameter defined in the step based fulfillment flow?

does it have sth to do with SLA?

 

I mean, what happens if I define SLA for this catalog item where delivery is different than the number defined here?

You can just create an SLA for this. The estimated time to deliver is just that: an estimation for the user ordering the item to know how much time it will take (preventing them to call when it's not there 10 minutes after they requested it).
