To determine whether record is created from UI /Portal/workspace

How can we determine whether any record per se Incident record is created from Next UI or portal or through workspace?

It depends on the process you follow, there is no direct way.
Like if incident is created from portal then contact type is Self Service
for SOW use interactions.
