What could be the possible impacts if I leverage SC task for approvals rather than OOB approvals?

I am sending catalog approvals sending back to power automate to send teams/outlook notifications later getting statuses back to ServiceNow.

Now I am trying to replace approvals with SC tasks? what could be the impact? disadvantages of it if we use sc tasks?

Sctasks can become complex to manage if there are many tasks or dependencies. Unlike approvals, which are typically straightforward (approve/reject), tasks may require more detailed coordination and follow-up and there’s a risk that SC task could be overlooked or delayed. 

And one more thing,

Approvals have clear states (e.g., approved, rejected), while tasks may have multiple states (e.g., open, in progress, closed). The logic needs to be updated.

We found OOB states to use on SC task table ex. Closed Completed, Closed Rejected, Closed Cancelled. We thought of going with this approach.

Are there inputs do I need to consider other than you mentioned?

That might look suspicious to ServiceNow. As you will be avoiding Approval licenses.
