What could be the possible impacts if I leverage SC task for approvals rather than OOB approvals?

I am sending catalog approvals sending back to power automate to send teams/outlook notifications later getting statuses back to ServiceNow.

Now I am trying to replace approvals with SC tasks? what could be the impact? disadvantages of it if we use sc tasks?

This is not for all together. I have just two catalog items where approvers may not be aware of ServiceNow UI and not always need to come inside of it. so, we thought to go for this exclusively for these two?
