I'm working with a team that wants to track environment bookings for development purposes. Given that an Application Service is an application running in an environment we thought that could be a starting point. e.g. You book an application service.
The other element is the booking and scheduling part for the application services, is there something in service now to keep track of that? Is its commonly done or is it an edge case?

Hi,
In terms of booking and scheduling development access to the system I have not heard of any such functionality within the ServiceNow platform. It would be fairly easy to create an application for it if you really want one but depending on your organizations needs this could be managed with something as simple as a catalog item where you request permission to have developer access to the dev environment. This could also leverage Project Management or Agile Development I guess.
When it comes to the CMDB and what CI you relate this too you could do it towards an Application Service however without knowing how your CMDB is utilized it's not possible for me to answer what the right way of working is. Other CIs that might be relevant are Business Applications and future classes that might turn up in the CSDM Build domain.
