Specially to answer your second question: vCenter discovery only creates record in VM Ware instance table as instance of that virtual windows server and not in Windows Server table.

But when you discover the windows Server using IP and Local or domain admin account it will create record in Windows Server table and link it to VMWare instance automatically.
