If someone adds me as a watcher on a case or multiple cases, can I see them on a list in Agent Workspace or a report?

Do you want to know who added you to the watch list of case?
If you were added to watch list field of case, then you would be granted read access to that case record

not just who but which cases I was added to: I would like to, as an agent on the Watch List, I want to view all ticket details, including work notes, directly from the list view, even when my notifications are turned off, so that I can stay informed without relying on email or notification alerts. Many agents have notifications turned off and are having a hard time managing where they have been place on the “watch list”.

In that case, you can just apply the below filter
Watch list -- contains -- javascript: gs.getUserID()
You might get red value but if you run the filter, it will apply the condition
