this is not OOTB behavior.
try to search
1) business rule
2) flow
3) workflow

Hi @srinidhi ,
The search in Flow Designer doesn't reliably look inside the actions, so searching for assignment_group won't find an Update Record step. Code Search has the same gap. It covers business rules and script includes, but not workflow activity scripts or flows.
It's easier to work backwards from the RITM. Order a test item, then open the Operations view (Flow Designer or Workflow Studio, depending on your release). Go to All Executions and filter Source record on the RITM's sys_id. Open the execution and step through the actions, and whatever sets Assignment group will be in there. Also open the catalog item and check the Process Engine tab, like Ankur said, so you know whether you're chasing a flow or a workflow.
If no flow ran, it's usually one of these:
1. A Run Script or Set Values activity in the item's workflow, something like `current.assignment_group = current.cat_item.group;` (group on sc_cat_item is the Fulfillment group). To find it, open sys_variable_value.list and filter Table = wf_activity, Value contains cat_item.group.
2. A business rule on sc_req_item. Code Search for cat_item.group will find it.
3. An Assignment Rule or data lookup on the RITM, which has no script to search for.
