Revert to Out-of-the-box Applications

At my current institution, we have been using Change Management for over ten years, and we have made several customizations at over the years that have prevented upgrade for many enhancements in the current change management application. We are looking to revert our customizations to Out-of-the-Box standards.
I have been looking at doing this with Upgrade history, but when I clone my prod environment to a sub-prod, I don't get the upgrade history copied for previous upgrades which make this difficult. It is further complicated because you can't easily filter changes based on application scope since this was an application created before those scopes existed. Comparing my developer instance with my enterprise instance is near impossible as there are so many sys_* tables and hidden tables that make it pretty impossible to compare line by line.
Does anybody out there have any practical experience reverting a customized application to an original state? What were your lessons learned? Any advice?

Thanks for your response. I should have been more specific in my question. I understand how to revert individual records and workflow technically. I'm familiar with "Upgrade History" and sys_update_xml. I'm inquiring more about peoples experience doing that for entire ITSM applications, (where you don't have the benefit of application scope to filter components.)
- What were your lessons learned?
- After you went through this exercise, did you determine if it was worth it?
- Before I go through 1,000s of line in sys_update_xml and upgrade history is there anything I need to know to make it easier?
- What was people's overall experience?

I am sailing in the same boat, and have similar questions like yours. Could you please share your experience of 'reverting the customizations to out of the box' here. Did you go through each record in sys_update_xml to revert those customizations? How did you plan for data migration?
