Turn of some of the items within Order Guide

Hi Community,
We are new to Service Now having just gone live this week. We have a few order guides configured by our SI partner and currently all the items are turned on. Ideally we would like some of the items turned off as they are optional but we are told this is not possible OOTB and you need to customise this which could cause issues when we want to upgrade.

I am surprised that this is the situation so want to clarify the Service Now community as I have found that it appears to be possible but requires scripting which seems to confirm the customisation approach. 

Appreciate any guidance/advice please.
