UU license vs ITIL

I am currently evaluating the difference between licenses. Right now, I assign the ITIL to fulfillers but we are looking into moving to the unlimited user license.
I have been unable to find any documents that explain the UU license so I came here to ask.
My questions are:
1. What apps are included in the UU license? For example, does it go beyond ITSM? Can I use it for SAM or instance or would that need an additional license?
2. Can the UU license take the place of a stakeolder license?
3. I know it is based on active users in the sys_user table and I currently have the LDAP integration from AD. What if some of those users would never access snow, even through the self-service portal but could call our help desk and have an agent submit an incident for them so their name would populate the caller field but that is the extent of that user. Would they be included in active users towards the count of a UU license?
4. Has anyone converted from ITIL to UU that could provide me with feedback?
Any detailed info would be very much appreciated.
