I have already created the variables for a catalog item how can I create a variable set from those 7 variables that I can use for all my catalog items?

To add the existing variable in to variable set, Follow the given steps
1. Create a new Variable Set if not created.
2. Open the Variable Set Record.
3. In the related tab of variables, Right Click on the filter and click on Open New Window
4. Remove the filter by clicking on the ALL.
5. Search for the variables that you created and want to add in variable set.
6. In the Variable Set column add the Created variable set name.
7. Now you can add all the variable you created in to variable sets
