Are workspaces available in the ServiceNow Store? 

The answer?  Well, YES...of course.  If you go to the store, simply search for "workspace" and a variety of prebuilt workspaces are available for your particular need.  For more information regarding workspaces, go HERE.

Question: What is the benefit for not making all tables extendable ? 

There may be instance that you don't want a table to be extended.

Child table records get added to the parent table.

If you only want the records in a table to be ones that are explicitly entered into it, then the table needs to be non extendible.
