Can I know where the UI Builder variables are stored in the servicenow instance?

Which variables youa re refering to? What exactly do you want to find? Best would be to show on the picture from UIB interface.

I have applied filter but it is not applying can I know the reason why it is not applying

On the data visualization component, there should be a property called Follow filters - have you checked that?

You can show variables to front-end by adding any stylized text and add this line - api.state.<variable_name>
