Vulnerability Exception Request Manual Approver

We have a requirement to manually change who the 2nd level approver on an Exception Request is in VR and AVR. For example, we currently have an automated flow of Level 1 Approver = Assignment WG Manager and Level 2 Approver = Assignment WG Manager Manager. However, that 2nd level approver isn't technically in the role it is designed for and it should go to someone else who is not associated to the Assignment WG at all (leader in training instead of leader for example). 

Any ideas how we can manually override who gets the exception request?

Can you please let me know how this functionality was achieved on your system to assign the Exception approval to manager of Assignment group?

Approval rules:
Exception Request for vulnerable items
Default Configuration

Level 1 - Exception Request for VI
One approval required
Assign using Approval table field
Approver table = Vulnerable Item
Approval table field = Assignment group Manager
