I am currently on the Administration fundamentals on demand and the lab examples are on sped up and hard for me to follow.. what do i do to be able to complete my lab practice questions

Just follow them step by step. And if the issue is that you don't know what you're doing or if some of the assignments are not clear to you, just go back and study the material again.

regarding your CSA preparation, there is official ServiceNow resource, one is an assessment to help you get an idea whether you are prepared or what areas to improve before taking that exam and the study materials as such.
