I would like to know why users assigned the [approver_user] role can view the "sysapproval_approver"

I am checking the ACLs for the "sysapproval_approver" table, but I cannot find an ACL that grants read access when the "approver_user" role is assigned...

@SakthiSwathi A similar question was asked by one of the fellow community member. There is no read ACL with role approver_user on the sysapproval_approver table. Any user can be an approver user in ServiceNow. The access to sysapproval_approver is governed via the approver_user which is assigned at the module level. Only the user with approver_user can see approvals in the Approvals module.
