Entity Recognition - Human readable static choice

In this Virtual Agent Academy: Getting Started with Entity Recognition video at 16:23 the speaker says he will go back and demo how to give the static choice a human-readable label and then doesn't. 

I've tried using sys ui messages like someone in the comments said they tried and it didn't work for me either (pre or post publishing the topic). Coming over from IBM Watson I find doing just about anything in servicenow NLU, unusually difficult. 

Does anyone know how to change the labels displayed to the user here without breaking the NLU entity recognition?
