My goal is to enter an email and password for a Approval step however with trying to use best practice i do not want to use a real user and password since that will be shown in the test run as well as having to change in down the road. I created two users in the atf test. I impersonated 1 with admin roles and open the second created user in the user table and set a generated password. Is it possible to 'copy' or get a data p!ll to have that generate password into a text field?

I don't think the steps you will be following is possible through ATF because for setting the password you will have to click on Set Password and that is a pop-up, and setting fields on pop-up is not possible.
What you can do is before running the ATF test you should create a test user manually and set the possible password. And use it in your test.
Don't forget to take created test user backup with your ATF test.
