Hello!

I have also completed my GRC courses and am yet to take the certification. Since you asked for real scenario-based requirements, I would like to share something.

For a client demo in my organization, I was asked to first configure and explore a few things that you can also try for practice. I would suggest starting with the OOTB flows for Policy, Control, Issue, and Risk.

Once you understand these flows, you can work on use cases that the client had specifically asked for:

1. When a control is found to be non-compliant, by default, an Issue is created. You can try extending this by creating a Risk along with it as well.

2. Since the Issue lifecycle flow is mostly manual, you can try automating it using Business Rules or Flows.

You can check my page where I post practical example demos for certain topics. I am also planning to start sharing GRC flows because I couldn't find many resources that explain the complete flow clearly.
