Hi,
After creating catalog item from catalog builder I have observed there are update sets which are created automatically by the system and it contains the items which I created when I was creating the catalog item.
This update set also automatically deletes/changes the fields of the catalog item.
PFA: My catalog item name was "Report an Issue' and after committing it to the prod instance some automatically update sets have also been created.
