Hello.
We are planning to upgrade our instance.
Is there an optimal time for the upgrade?
For example, nighttime is better.

Depends on whether it's a PDI, production, or development instance.
Following is just my personal insight. Requirements may differ depending on the situation.
I usually I'll upgrade my PDI as soon as I can regardless of time.
Better to upgrade development instance after testing on PDI. Better to upgrade when instance admin is at work in case there's a problem. Development instance can be upgrade during working hours in weekdays if developers are OK with that.
Production instance should be upgraded when there's few users using it. Should take some time to test before many end-users begin using it. Sometimes, things may not work as expected even after testing in development instance. Fixing may require some time. This may impact end-users. If possible, weekends or during holiday is better.
If there's not too many customization and not too many users, upgrade maybe done earlier in the morning. It's better to have instance admin during the upgrade process to check to see if everything is going as planned.
End-users are still able to use ServiceNow during upgrade to it's better to do the upgrade when instance admin is present rather than during some other time when instance admin is not able to monitor the activities.

Hi
it depends on your business and in which places all over the world your ServiceNow is used. So in your country it is night but on the other side of the planet it is not.
More important is the overall planning of an upgrade. For this see the following checklist: https://docs.servicenow.com/bundle/sandiego-release-notes/page/release-notes/upgrades/upgrades-plann...
And in the attached document (latest release of my Knowledge Sources To Go) you will find an individual chapter "Cloning" with lots of links to additional helpful resources.
Kind regards
Maik
