This feels like it should be very straightforward, but I cannot for the life of me find any documentation specifically regarding the banner image in SOW, nor can I figure out how to adjust it in SOW. In both UI16 & Polaris, the correct image is shown. On the UX App Configuration [sys_ux_app_config] for Service Operations Workspace I adjusted the value of the Custom Icon field & cleared the value of the icon field. The banner image seems to just be stuck on the default ServiceNow image.
Can anyone please provide some guidance to customize the banner image?

@Dr Atul G- LNG & @Tai Vu both of your answers were for the banner image in UI16 which we already had customized. I was trying to customize the banner image of SOW.
I opened a support ticket as well & they provided me with a KB that worked.

I added a UX Theme Asset to the Service Operations Workspace Theme following the steps listed in that KB.
